Brazilian Lemonade

This Brazilian lemonade is a sweet, tangy drink made by blending whole limes with water, then re-blending the strained juice with ice, sugar, and sweetened condensed milk for a frothy, refreshing finish.

Ingredients
  

5 limes, washed thoroughly (skin left on for blending)
4 cups water
1 cup ice
¼ cup sugar
¼ cup sweetened condensed milk

Equipment

  • Blender
  • Fine mesh strainer
  • Large bowl or pitcher
  • Cutting board and knife

Method
 

Wash the limes well since they will be blended with the skin on.
    Slice off both ends of each lime.
      Cut each lime in half lengthwise and cut away the white pith running through the center. This step is essential, since the pith is what makes the lemonade bitter.
        Place the prepped limes into the blender.
          Add the 4 cups of water and blend until smooth.
            Pour the blended mixture through a fine mesh strainer set over a bowl or pitcher to remove the pulp.
              Discard the strained pulp. It is very bitter and should not be eaten.
                Pour the strained lime liquid back into the blender.
                  Add the ice, sugar, and sweetened condensed milk.
                    Blend again until smooth and frothy.
                      Pour into glasses and serve immediately.

                        Notes

                        Removing the white pith before the first blend is the key step in this recipe. It keeps the lemonade sweet and clean tasting instead of bitter. Serve right away for the best flavor and texture, since the drink loses its frothiness the longer it sits.
